Ingredients
  • 1 teaspoon smoked paprika
  • 1/4 cup cranberries
  • 1 tablespoon crystallized ginger
  • 1 1/2 teaspoons hot pepper
  • 2/3 cup Greek Yogurt fat free
  • 4 oz edam cheese low fat
  • 4 oz Swiss cheese low fat
  • 4 oz Monterrey Jack Cheese low fat
Method
  • In the bowl of a food processor grind or shredd each cheese. Then place all the ingredients into the food processor and process for 10 seconds at a time until allmos all the ingredients are blended. Transfer the mix to a bowl.
  • Mix more if needed. Place the cheese mixture over plastic wrap and form a ball. Then press on the top sides to make it more slender on top. It will look lik a pyramid; this way it will stand.
  • Refrigerate for 2 hours or overnight. Then take a pineapple and ckut the the top leaves leaving some pineapple to pluck into the cheese and hold itself up. See picture.
  • When ready to serve, peel off the plastic from the cheese. Add some smoked paprika to is and mark it with a spoon. Make a whole in the top center and place the pineapple leaves there. Serve.
