Ingredients
1½ cups mezclun Greens, Kale or Dark Leafy Green Mix
1 cup mixed berries halved strawberries and blackberries
2 tablespoons Lime Vinaigrette (pg. 57)
*Lime Vinaigrette
1 tablespoon lime juice
1 tablespoon minced pickled ginger
1 tablespoon minced cilantro
¼ teaspoon honey or sugar substitute
1 tablespoon water
¼ teaspoon salt
2 tablespoons oil
¼ teaspoon dark sesame oil
Method
Mix all ingredients and serve at once.
If taking your salad to the office, place dry greens on one container and dressing with vegetables, nuts, fruit and protein in another container.
