Ingredients
  • 1½ cups mezclun Greens, Kale or Dark Leafy Green Mix
  • 1 cup mixed berries halved strawberries and blackberries
  • 2 tablespoons Lime Vinaigrette (pg. 57)
  • *Lime Vinaigrette
  • 1 tablespoon lime juice
  • 1 tablespoon minced pickled ginger
  • 1 tablespoon minced cilantro
  • ¼ teaspoon honey or sugar substitute
  • 1 tablespoon water
  • ¼ teaspoon salt
  • 2 tablespoons oil
  • ¼ teaspoon dark sesame oil
Method
  • Mix all ingredients and serve at once.
  • If taking your salad to the office, place dry greens on one container and dressing with vegetables, nuts, fruit and protein in another container.
