Bake the plantains, allow to cook and set aside to cool enough so you can handle it. When cool, dice small. (1/3 inch dice approx.)
Place salt, cinnamon, sugar, butter, milk, vanilla and eggs in a bowl. Mix with a wire wisk to all the egg is well blended.
Cut the guava paste into tiny dice. Add to the egg mix. Add the cheese and the diced plantain too.
Spray or butter a mini cupcake baking pan (24 cupcakes). Add 1/4 cupfulls of mixture into each. Cook in a preheated 350 °F for 25 minutes or until it feels set in the middle.
