Ingredients
  • 4 plantains
  • 2 teaspoon salt
  • 2 teaspoon sugar
  • 4 tablespoons butter
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 4 eggs
  • 1/2 teaspoon ground cinnamon
  • 1 pound guava paste
  • 1/2 pound white farmer's cheese*
Method
  • Bake the plantains, allow to cook and set aside to cool enough so you can handle it. When cool, dice small. (1/3 inch dice approx.)
  • Place salt, cinnamon, sugar, butter, milk, vanilla and eggs in a bowl. Mix with a wire wisk to all the egg is well blended.
  • Cut the guava paste into tiny dice. Add to the egg mix. Add the cheese and the diced plantain too.
  • Spray or butter a mini cupcake baking pan (24 cupcakes). Add 1/4 cupfulls of mixture into each. Cook in a preheated 350 °F for 25 minutes or until it feels set in the middle.
  • Unmold and serve warm or at room temperature.
