Ingredients
  • 2 cups flour
  • 1 orange
  • 1 tablespoon candied ginger, minced
  • 1/2.Teaspoon.cinnamon 1/4 teaspoon allspice
  • 1/4 cup dark rum
  • 1 cup brown sugar
  • 1 cup sugar
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 4 Dark skinned bananas (very ripe)
  • 5 eggs
  • 1 cups oil
  • 1 cup toasted walnuts
  • 2 cups dried unsweetened fruit
Method
  • Process fruit one by one and place in a bowl. Add rum, ginger, peel and spices, mix and set aside for 24 hours to 2 weeks.
  • Cake Prep: Mix flour, sugar, baking powder and baking soda in a bowl and mix with a fork. Make a well in the center and add eggs, oil, prepared fruit, bananas and cashews. Mix with machine or by hand for about 1 minute.
  • Pour into a buttered and floured pan, whose bottom has been lined with waxed or parchment paper.
  • Bake in a preheated 320°F oven, in a baking pan with about one inch of water or Bain Marie, for 1 hour and 30 minutes.
  • Turn the oven off. Leave cake in the oven for 10 more minutes. Remove cake from the oven allow to cool about 20 minutes and unmold.
