Process fruit one by one and place in a bowl. Add rum, ginger, peel and spices, mix and set aside for 24 hours to 2 weeks.
Cake Prep:
Mix flour, sugar, baking powder and baking soda in a bowl and mix with a fork. Make a well in the center and add eggs, oil, prepared fruit, bananas and cashews. Mix with machine or by hand for about 1 minute.
Pour into a buttered and floured pan, whose bottom has been lined with waxed or parchment paper.
Bake in a preheated 320°F oven, in a baking pan with about one inch of water or Bain Marie, for 1 hour and 30 minutes.
Turn the oven off. Leave cake in the oven for 10 more minutes. Remove cake from the oven allow to cool about 20 minutes and unmold.
