Ingredients
3 ounces smoked salmon
1/2 cups cooked bowtie pasta
1/2 cup alfalfa sprouts
1/2 cup escarole
1 tablespoon pine nuts, lightly toasted
4 tablespoons Pineapple Dressing (pg. 55)

¼ cup pureed pineapple, fresh or frozen
1 tablespoon white wine vinegar
½ teaspoon honey or sugar substitute
Chili Powder (optional) ½ teaspoon
Olive oil 2 tablespoons
pinch of Salt
1/8 teaspoon pepper
Method
Cook the pasta and add 1 tablespoon of dressing; cool pasta and set aside.
Mix nuts & dressing and add to the pasta. Chop the escarole and the sprouts so they easily blend.
Place the pasta on the bowl or platter, add the rest of the ingredients on top and mix.
