Ingredients
  • 3 ounces smoked salmon
  • 1/2 cups cooked bowtie pasta
  • 1/2 cup alfalfa sprouts
  • 1/2 cup escarole
  • 1 tablespoon pine nuts, lightly toasted
  • 4 tablespoons Pineapple Dressing (pg. 55)

  • ¼ cup pureed pineapple, fresh or frozen
  • 1 tablespoon white wine vinegar
  • ½ teaspoon honey or sugar substitute
  • Chili Powder (optional) ½ teaspoon
  • Olive oil 2 tablespoons
  • pinch of Salt
  • 1/8 teaspoon pepper
Method
  • Cook the pasta and add 1 tablespoon of dressing; cool pasta and set aside.
  • Mix nuts & dressing and add to the pasta. Chop the escarole and the sprouts so they easily blend.
  • Place the pasta on the bowl or platter, add the rest of the ingredients on top and mix.
  • ENJOY!
