Ingredients
  • 3 eggs
  • 2/3 cup oil
  • 1 mashed banana
  • rind of one orange
  • 4 tablespoons sugar
  • 3/4 cup milk
  • 2-1/4 cups oats
  • 1 tablespoon baking powder
  • 1/2 cup ground walnuts
Method
  • Place all dry ingredients in a mixer bowl. Mix well with a fork.
  • Place all wet ingredients in another bowl.
  • Transfer wet ingredients into bowl with dry ingredients. Mix with a fork until all ingredients are blended.
  • Transfer to an oiled and floured cupcake pan.
  • Bake at 350°F for 55 minutes.
  • Allow to cool 5 minutes, turn to unmold and serve.
