Ingredients
  • ΒΌ avocado, to place over chipotle
  • 1 tablespoon cilantro
  • 1 chicken breast, cooked and shredded
  • 2 slices whole grain cinnamon raisin bread
  • 1 whole roasted chipotle pepper, chopped to spread on one side of one slice bread
  • 2 tablespoons Greek Yogurt (to spread on the other slice of bread)
  • 1 cup spinach, raw washed
  • 1/2 green apple, sliced thin
  • 1 tablespoon walnuts, chopped
Method
  • Toast bread slices if desired.
  • Mix yogurt and walnuts; spread over one slice of bread.
  • Place avocado, cilantro and apple over the yogurt mixture. Add chicken, place whole pepper over it and cover with the other slice of bread.
  • Cut in half and enjoy!
