Mix the yogurt, scallions, cilantro, parsley, garlic paste, salt and peppercorns in a bowl.
Rub and spread, and the mix on and into the skin of the turkey; between the skin and the breasts, into the cavity and over all of the outside (skin). Refrigerate overnight…but if you can’t let it marinate at least 2 hours.
Bake at 300F for 4 hours. The turkey will be ready when the temperature at the thigh reaches 160°F.
Cover with foil and set aside for 15 to 20 minutes. Then cut and serve.
