Start by making a few cross cuts on the skin without cutting through the meat.
Cut 2 onions into pieces and place them on the bottom of the pan where you will cook the pork.
Mix all the ingredients except the GINGER. Rub/spread the mixture over the pork - especially within the cuts, and on the sides and bottom. Then finely grate or process 2 pieces of ginger into a GINGER PASTE.
Marinate the pork in the fridge overnight or up to 2 days.
The next day place 1 cup of ORANGE JUICE in the baking dish, add the ONION and the PORK LEG. Add the grated ginger with in the sliced cuts of the pork skin. Let stand 3 to 4 hours while it reaches room temperature.
Bake at 320F for 15 minutes per pound; caould take 8 to 10 hours. Remove from the oven and allow to sit covered for 30 minutes, carve and serve.
