Ingredients
1 teaspoon salt
1 whole chicken defrosted
4 tablespoons mixed fresh herbs
2 Tablespoons Chef Pachi's garlic paste
1 tablespoon dried herb
4 tablespoons plain Greek Yogurt
½ teaspoon pepper
Method
Spread chimichurri sauce under the chicken’s skin,and over it. Sprinkle with salt and pepper and refrigerate one hour or overnight.
Bake in a preheated 375°F oven for 1 1⁄2 hours or until it reaches and internal temperature of 160°F.
Remove from the oven, cut into the two breasts, leg and thigh. Remove the skin before eating or serving. Serve.
