Ingredients
2 cups brown rice
2 scallions
.5 cups water
2 cloves garlic
1 serrano pepper (op)
1.5 cups coconut milk
2 teaspoons salt
2 tablespoons dark brown sugar
1 cup black-eyed peas
Method
Place all ingredients in the bowl of a pressure cooker. Mix with a spoon or fork.
Cover the pressure cooker, and cook over medium heat for 50 minutes.
Release the pressure and open the lid of the pressure cooker. Mix and serve.
