Ingredients
  • 2 cups brown rice
  • 2 scallions
  • .5 cups water
  • 2 cloves garlic
  • 1 serrano pepper (op)
  • 1.5 cups coconut milk
  • 2 teaspoons salt
  • 2 tablespoons dark brown sugar
  • 1 cup black-eyed peas
Method
  • Place all ingredients in the bowl of a pressure cooker. Mix with a spoon or fork.
  • Cover the pressure cooker, and cook over medium heat for 50 minutes.
  • Release the pressure and open the lid of the pressure cooker. Mix and serve.
