Ingredients
  • 2 Lb. eggplant, zucchini or yellow zucchini 11‚ÅÑ2 teaspoon salt
  • olive oil spray
  • 1/4 teaspoon pepper
Method
  • Slice eggplant, zucchini or yellow zucchini 1/8 inch thick. Sprinkle with salt and set aside in bowl for 10 minutes.
  • Wash and drain eggplant, zucchini or yellow zucchini, dry with paper towels and set over an olive-oiled pan.
  • Sprinkle with pepper and bake in a preheated 350°F oven for 15 minutes or until golden brown.
  • Serve with your favorite chips.
