Ingredients
  • 3/4 teaspoons dried orĂ©gano
  • 6 tablespoons cilantro
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 9 tablespoons white vinegar
  • 3/4 teaspoons hot sauce
  • 2 yellow onions
  • 2 cups diced tomato
  • 1.5 cups olive oil
  • 3 cups black beans
  • 2 red bell peppers
  • 2 cups quinoa
  • 6 tablespoons lime juice
  • 6 avocadoes
Method
  • To cook Quinoa:To cook Quinoa: 1. Place quinoa in a pot with 1 cup of water. Bring to a boil, reduce the heat to medium and cook for 10 - 15 minutes until the water dries out completely, about 15 minutes. Remove from the pot and transfer to a bowl to cool slightly.
  • 2. To prepare the salad mix all the ingredients except lettuce in a large bowl or pan and allow for the flavors to develop by leaving it refrigerated for 15 minutes up to 2 days.
