Ingredients
  • 1/2 cup grapefruit slices & 1/2 cup juice
  • 1/2 cup red bell pepper
  • 1/2 cup shaved fennel
  • 1/2 cup cooked quinoa
  • 1/2 cup sliced portobello mushrooms
  • 1/2 teaspoon sesame oil
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon honey
  • 1 tablespoon toasted pine nuts
Method
  • To cook Quinoa:To cook Quinoa: 1. Place quinoa in a pot with 1 cup of water. Bring to a boil, reduce the heat to medium and cook for 10 - 15 minutes until the water dries out completely, about 15 minutes. Remove from the pot and transfer to a bowl to cool slightly.
  • To prepare the salad mix the remaining ingredients with 1/2 cup of grapefruit juice: sesame oil, curry, honey, a pinch of salt and pepper. Add the vegetables which can be lightly cooked or raw. Mix with quinoa and enjoy!
  • Let it rest for 30 minutes and serve.
