To cook Quinoa:To cook Quinoa: 1. Place quinoa in a pot with 1 cup of water. Bring to a boil, reduce the heat to medium and cook for 10 - 15 minutes until the water dries out completely, about 15 minutes. Remove from the pot and transfer to a bowl to cool slightly.
To prepare the salad mix the remaining ingredients with 1/2 cup of grapefruit juice: sesame oil, curry, honey, a pinch of salt and pepper.
Add the vegetables which can be lightly cooked or raw. Mix with quinoa and enjoy!
