Freeze in individual portions for easy sandwiches and wraps
Ingredients
1.5 lbs pork butt
2 sprigs thyme
2 tablespoons mustard
1/4 cup plain yogurt
2 oz of cider
Method
SEASON PORK WITH ALL THE INGREDIENTS, OVERNIGHT
Place 1/2 cup of cider, beer or water into a PRESSURE COOKER (you can also use WATER WITH LIME AND GINGER, GINGER ALE, OR FRUIT JUICE). Cook at high pressure for 50 mintues
Do not release the pressure from the pressure cooker let it slowly let it out on its own.
Remove from the pot and with two forks, separate the tender cooked pork.
