Defrost under runing water, 5 m.
Ingredients
¼ pound shrimp, cut in half horizonal, or butterfly
¼ avocado
2 tablespoons ground walnuts
¼ cup oatmeal
1 tablespoon lemon juice
1 teaspoon grated lemon rind
1 tablespoon fresh oregano
1 tsp olive oil
1/8 teaspoon salt pp
¼ cup Pico de Gallo
Method
Place oats, walnuts, lemon zest, basil, salt and pepper in a bowl. Sprinkle over both sides of the shrimp.
Place shrimp and tomatoes in a baking pan and cook 7 minutes 425°F.
Remove from the oven, sprinkle with olive oil and serve with avocado and Pico de Gallo.
