Ingredients
  • ¼ pound shrimp, cut in half horizonal, or butterfly
  • ¼ avocado
  • 2 tablespoons ground walnuts
  • ¼ cup oatmeal
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon rind
  • 1 tablespoon fresh oregano
  • 1 tsp olive oil
  • 1/8 teaspoon salt pp
  • ¼ cup Pico de Gallo
Method
  • Place oats, walnuts, lemon zest, basil, salt and pepper in a bowl. Sprinkle over both sides of the shrimp.
  • Place shrimp and tomatoes in a baking pan and cook 7 minutes 425°F.
  • Remove from the oven, sprinkle with olive oil and serve with avocado and Pico de Gallo.
