Great Snack for Pregnant Women
Ingredients
1 pound dry chickpeas
1 cup cashews
2 tablespoons lime peel
3 sprigs fresh oregano
1.25 cups yellow corn flour
Method
Place dried, washed chickpeas: in a bowl place chickpeas and add water. Let them stand at room temperature for 6 to 12 hours.
Transfer the beans into the pot of a pressure cooker, add 6 cups total water. Cover and cook in high for 20 minutes in high pressure.
Remove the pressure from the pressure cooker, open the lid. Take the beans out of the cooking liquid and drain. Set aside to cool to room temperature.
Remove 1 cup of beans from the mixture and set aside to prepare the DIP.
Process the rest of the beans for 15 seconds at a time, or until a grainy paste is made, transfer to a bowl.
Add the ground corn, - from 1/2 pound of prepared corn- into the food processor and mix to form a sticky ball.
