Ingredients
  • 1 pound dry chickpeas
  • 1 cup cashews
  • 2 tablespoons lime peel
  • 3 sprigs fresh oregano
  • 1.25 cups yellow corn flour
Method
  • Place dried, washed chickpeas: in a bowl place chickpeas and add water. Let them stand at room temperature for 6 to 12 hours.
  • Transfer the beans into the pot of a pressure cooker, add 6 cups total water. Cover and cook in high for 20 minutes in high pressure.
  • Remove the pressure from the pressure cooker, open the lid. Take the beans out of the cooking liquid and drain. Set aside to cool to room temperature.
  • Remove 1 cup of beans from the mixture and set aside to prepare the DIP.
  • Process the rest of the beans for 15 seconds at a time, or until a grainy paste is made, transfer to a bowl.
  • Add the ground corn, - from 1/2 pound of prepared corn- into the food processor and mix to form a sticky ball.
