Ingredients
  • 12 oz jar or can of corn, rinsed
  • 1 tablespoon minced red onion
  • Juice of one lime, peel if desired
  • ½ teaspoon fresh peppercorns ground with olive oil
  • 2 tablespoons minced cilantro
  • 2 tablespoons diced tomato
Method
  • Place cooked, drained corn in a small bowl.
  • Mince the rest of the ingredients and transfer to the bowl.
  • Mix all the ingredients and set aside refrigerated until ready to serve.
