Ingredients
12 oz jar or can of corn, rinsed
1 tablespoon minced red onion
Juice of one lime, peel if desired
½ teaspoon fresh peppercorns ground with olive oil
2 tablespoons minced cilantro
2 tablespoons diced tomato
Method
Place cooked, drained corn in a small bowl.
Mince the rest of the ingredients and transfer to the bowl.
Mix all the ingredients and set aside refrigerated until ready to serve.
