Freeze in individual portions for easy sandwiches and wraps
Ingredients
1.5 pounds chicken tenders
¼ cup Greek yogurt
¼ cup DIJON MUSTARD
peel of 1 lime
½ teaspoon pepper
Method
Place chicken, yogurt, mustard and pepper in a bowl. Mix and set aside for 5 to 10 minutes.
Cook with 1/4 cup of water in a pressure cooker at medium for 8 minutes.
In a traditional pot, place seasoned chicken with 1 cup of water into a pot. Bring to a boil. Cover and cook for 4 minutes and set aside without heat, but covered, 4 minutes more.
Remove the chicken from the liquid; keep the liquid as sauce stock. With two forks shred the chicken and allow to cool before freezing or use.
