Ingredients
  • 1 cup drained cowpeas cooked, if from a jar then rinsed
  • 1 sprig of rosemary
  • 1 roasted red pepper
  • 1 teaspoon fresh peppercorns ground in olive oil
Method
  • Place cooked, drained black eyed peas in a small bowl.
  • Mince the rest of the ingredients.
  • Mix all the ingredients and set aside refrigerated until ready to serve.
