Ingredients
  • 1 cup quinoa flour
  • 1/4 cup corn flour
  • 1 teaspoon baking powder
  • 2 tablespoons coconut oil
  • 3/4 cup water
Method
  • Place all ingredients into a food processor and mix for 1 minute. Allow the mixture to sit for 5 minutes. Turn the processor on again and mix for 1 to 2 minutes or until you have a sticky dough.
  • Place a large piece of plastic wrap over the counter, dump the dough onto the plastic and form a log. Cut into 16 pieces.
  • FORMING THE AREPAS Take one by one a piece of masa and place it over another piece of plastic wrap or a plastic bag. Place more plastic wrap or bag over the sticky dough. Use a flat surface to flatten the sticky dough to 1/8 of an inch thick or more if desired. Peel the top plastic of, then turn the flattened flatbread over your hand and peel the second plastic.
  • Cook or Freeze. COOK: Place over an oiled baking pan or grill. Cook @medium heat for 3-4 min per side.. Place over a non stick pan or an oiled skillet. Cook @medium heat for 3-4 min per side.. Place on a crepe or pancake machine. Cook @medium heat for 3-4 min per side..or 3-4 min only if it has two heating elements. Place on an airfryer. Cook @390°F for 6-8 min.
