Place quinoa in a pot with water. Bring to a boil, reduce the heat to médium high and cook until the water dries out completely, about 15 minutes. Remove from the pot and transfer to a bowl to cool slightly.
Transfer quinoa to a food processor and add corn flour. Mix for 30 seconds. Add garbanzo liquid and mix for 30 seconds more. Allow the mixture to sit for 5 minutes. Turn the processor on again and mix for 1 to 2 minutes or until you have a sticky dough. Now you have your masa!
Place a large piece of paper over the counter, place the dough onto the plastic and form a log. Cut into 16 pieces.
FORMING THE AREPAS
Take 1 inch slices of your quinoa roll. If you have a panini or crepe maker, then place the roll slice, cover and bake for 2-3 mintues. Otherwise, place one by one under and over pieces of plastic wrap or a plastic bag. Use a flat surface to flatten the sticky dough to 1/8 of an inch thick or more if desired.
Peel the top plastic of, then turn the flattened flatbread over your hand and peel the second plastic.
Cook or Freeze.
COOK:
Place over an oiled baking pan or grill. . Cook @medium heat for 3-4 min per side..
Place over a non stick pan or an oiled skillet. Cook @medium heat for 3-4 min per side..
Place on a crepe or pancake machine. Cook @medium heat for 3-4 min per side..or 3-4 min only if it has two heating elements.
Place on an airfryer. Cook @390 for 6-8 min.
