Ingredients
  • 1 tablespoon pesto
  • 4 sun dried tomatoes
  • pinch pepper
  • 1 whole chicken breast, cut in the center
  • 1 tablespoon plain yogurt
Method
  • Cut the breast in half lengthwise, butterfly style.
  • Add the rest of the ingredients over the breast and spread all over it. Cover it back if you are going to bake it. Grill it open as it is.
  • Transfer the breast to a baking pan, pour 1/2 cup of water, wine or juice into the pan (it creates steam).
  • Preheat the ovento 350°F and bake for 17 minutes approx. or until no pink liquid comes out when you prick it.
  • Set aside covered for 2 minutes and serve. Scrape the baking pan with a spatula and drizzle over the cooked chicken breast.
  • Enjoy!
