Prep to freeze when seasoned
Ingredients
1 tablespoon pesto
4 sun dried tomatoes
pinch pepper
1 whole chicken breast, cut in the center
1 tablespoon plain yogurt
Method
Cut the breast in half lengthwise, butterfly style.
Add the rest of the ingredients over the breast and spread all over it. Cover it back if you are going to bake it. Grill it open as it is.
Transfer the breast to a baking pan, pour 1/2 cup of water, wine or juice into the pan (it creates steam).
Preheat the ovento 350°F and bake for 17 minutes approx. or until no pink liquid comes out when you prick it.
Set aside covered for 2 minutes and serve. Scrape the baking pan with a spatula and drizzle over the cooked chicken breast.
