Ingredients
  • 1 medium-size mango completely ripe and sweet, sliced thick, I heaping cup
  • ½ cup evaporated milk with 50% less fat
  • Peel of 1 lime
  • 1 tablespoon lime juice
  • 1 teaspoon unflavored gelatin
  • 2 teaspoons water
Method
  • Place mango, evaporated milk, 1 teaspoon lime juice and lime peel in the jar of an immersion blender and process to a smooth texture.
  • Mix gelatin and water on the side of a small pot; place over low heat for 10 seconds to melt gelatin. Do not let it boil.
  • Remove from the heat and mix to dissolve the gelatin. Add to the immersion blender and mix again. Refrigerate this mixture for 10-20 minutes.
  • Beat the whites with 2 teaspoons of lime juice during 1 minute. Add sugar substitute and mix 1 to 2 minutes to a medium peak stiffness.
  • Fold mango mixtures into egg whites. Pour into 4 cups and refrigerate until ready to serve.
