Ingredients
2 tablespoon chickpea tahini, prepared
2 tablespoon diced peeled cucumber
2 tablespoon diced peeled tomato
1 teaspoon minced mint leaves
pinch salt and pepper
2 tablespoon lightly toasted pine nuts
4 lettuce leaves
Method
Place chickpea tahini, cucumber, tomato, salt and pepper in a bowl and gently mix.
Divide mixture and place over lettuce leaves, add pine nuts and wrap. Serve.
