Ingredients
  • 2 tablespoon chickpea tahini, prepared
  • 2 tablespoon diced peeled cucumber
  • 2 tablespoon diced peeled tomato
  • 1 teaspoon minced mint leaves
  • pinch salt and pepper
  • 2 tablespoon lightly toasted pine nuts
  • 4 lettuce leaves
Method
  • Place chickpea tahini, cucumber, tomato, salt and pepper in a bowl and gently mix.
  • Divide mixture and place over lettuce leaves, add pine nuts and wrap. Serve.
