Ingredients
  • 1 honey wheat English Muffin, halved
  • 1.5 ounces smoked salmon sliced
  • 1 Tablespoon Goat Cheese Spread Two (pg. 38)
  • 1 egg white, cooked in olive oil spray
  • 2 romaine lettuce leaves, romaine
  • * Yogurt Spread Two Herbs, 2 servings - 1 tablespoon each
  • 2 tablespoon low - fat plain yogurt
  • 1/2 teaspoon thyme
  • 1/2 teaspoon diced cilantro
  • pinch of salt and pepper
  • Salt and pepper 1/8 teaspoon
Method
  • Cut the English Muffin in half. Toast if desired. Spread each side with 1⁄2 tablespoon Goat Cheese Spread Two.
  • Cook the egg white in a small non stick pan.
  • Arrange salmon, egg white and watercress over one half, cover, place in toaster oven for 2 minutes and serve.
