Snack Post Exercise
Increase protein by cutting pasta by half.
Ingredients
1 recipe Picadillo or Pico de Gallo (pg. 44)
4 cups uncooked pasta
1 Lb. lean ground meat, ground round
1 tablespoon Worcestershire Sauce
1 tablespoon balsamic vinegar
1 tablespoon mustard
10 leaves basil, julienne
1/2 teaspoon salt
¼ teaspoon pepper
*Picadillo
¼ cup minced scallion
¼ cup minced cilantro
¼ cup small diced, peeled and seeded tomato
1 tablespoon lime juice
¼ teaspoon salt
1/8 teaspoon pepper
Method
Place meat, Worcestershire sauce, vinegar, mustard, half of the basil, salt and pepper in a bowl and mix well. You can do this in your processor too.
Transfer beef to a sauce pan and cook over medium heat, mixing to prevent lumps, for 7 to 8 minutes or until fully cooked and somewhat browned.
Cook the pasta!
Add tomato sauce to the pan and cook for 3 minutes more.
Leave the remaining basil leaves to add right before serving, mix and serve.
