Ingredients
  • ½ cup prepared beans without liquid
  • ½ cup liquid from beans and or vegetable stock or water
  • 1 tablespoon yogurt
  • 1 tablespoon Picadillo (pg. 45)
  • *Picadillo
  • ¼ cup minced scallion
  • ¼ cup minced cilantro
  • ¼ cup small diced, peeled and seeded tomato
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
Method
  • Place beans and liquids in blender.
  • Add Yogurt (Dairy or Vegan) over the soup. Serve with Pico de Gallo on top.
  • Serve with brown rice and additional Yogurt (Dairy or Vegan) if desired.
