Ingredients
½ pound broccoli florets
½ tablespoon pesto
1 teaspoon olive oil
2 garlic cloves, sliced
¼ teaspoon salt
1/8 teaspoon pepper
1 cup vegetable stock or water
2 tablespoons Greek Plain Yogurt
Method
Place broccoli florets on a large piece of foil. Mix pesto and olive oil and drizzle over florets; tranfer to a baking pan.
Cook in preheated 350°F oven for 30 to 40 minutes or until lightly golden.
Blend with hot stock, add Yogurt (Dairy or Vegan) and blend again.
Serve.
