Ingredients
  • ½ pound broccoli florets
  • ½ tablespoon pesto
  • 1 teaspoon olive oil
  • 2 garlic cloves, sliced
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup vegetable stock or water
  • 2 tablespoons Greek Plain Yogurt
Method
  • Place broccoli florets on a large piece of foil. Mix pesto and olive oil and drizzle over florets; tranfer to a baking pan.
  • Cook in preheated 350°F oven for 30 to 40 minutes or until lightly golden.
  • Blend with hot stock, add Yogurt (Dairy or Vegan) and blend again.
  • Serve.
