Ingredients
  • 1¼ pound cherry tomatoes, very ripe
  • ½ tablespoon Pesto sauce (pg. 61)
  • 1 teaspoon olive oil
  • 1 large garlic clove, sliced
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup vegetable stock or water
  • 1½ tablespoonG reek Plain Yogurt
Method
  • Place tomatoes on a foil covered baking pan. Mix pesto, olive oil, garlic, salt and pepper and drizzle over the tomatoes. Sprinkle garlic, salt and pepper and cover; tranfer to a baking pan.
  • Cook in a preheated 350°F oven for 30 to 40 minutes until very soft.
  • Blend with hot stock. Serve with Yogurt (Dairy or Vegan).
  • Enjoy!
