Add a slice of bread or sweet potato.
Ingredients
1 ½ cups romaine, chopped
6 quartered cherry tomatoes
1 tablespoon grated fresh parmesan cheese
Romaine & Cherry Tomatoes w/ Balsamic
Creamy Balsamic
1 tablespoon Balsamic vinegar (dark or white)
¼ teaspoon Honey or sugar substitute
4 tablespoons Low-fat Yogurt Spread or Greek Yogurt (pg. 39)
1 tablespoon Olive oil
pinch of salt
1/8 teaspoon Pepper
Low Fat Yogurt
1 cup strained yogurt or Greek yogurt, plain unsweetened
½ cup white wine
15 basil leaves
3 thyme sprigs
½ tablespoon cornstarch
½ teaspoon minced garlic
½ teaspoon salt
Method
Mix all ingredients and serve at once.
If taking your salad to the office, place dry greens on one container and dressing with vegetables, nuts, fruit and protein in another container.
