Ingredients
3 cups romaine and kale mix (or Asian Mix leaves), chopped
3 ounces diced cooked turkey breast
1/8 of an avocado
4 tablespoons Mango Vinaigrette (pg. 55)
*Mango Vinagrette
1/4 cup mango, diced
2 tablespoons olive oil
1 tablespoon white wine vinegar
1/4 teaspoon honey or sugar substitute
1 teaspoon chili powder
ΒΌ teaspoon salt
1/8 teaspoon pepper
Method
Mix all ingredients and serve at once.
If taking your salad to the office, place dry greens on one container and dressing with vegetables, nuts, fruit and protein in another container.
