Ingredients
  • 3 cups romaine or a mix of romaine and mustard greens
  • 3 ounces cooked shrimp without shell and deveined
  • ½ small diced mango
  • 3 tablespoons Mango Vinaigrette (pg. 60)
  • *Mango Vinagrette
  • 1/4 cup mango, diced
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1/4 teaspoon honey or sugar substitute
  • 1 teaspoon chili powder
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
Method
  • Mix all ingredients and serve at once.
  • If taking your salad to the office, place dry greens on one container and dressing with vegetables, nuts, fruit and protein in another container.
