Ingredients
  • 1 cup arugula leaves
  • 2 cups bib lettuce leaves, packed
  • 2 ounces smoked salmon
  • ½ cup roasted asparagus pieces
  • 4 tablespoons Mango Vinaigrette (pg. 60) o Kiwi Vinaigrette (pg. 59)
  • *Mango Vinaigrette
  • 1/4 cup mango, pureed
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1/4 teaspoon honey or sugar substitute
  • 1 teaspoon chili powder
  • pinch of salt
  • 1/8 teaspoon pepper
Method
  • Mix all ingredients and serve at once.
  • If taking your salad to the office, place dry greens on one container and dressing with vegetables, nuts, fruit and protein in another container.
