Ingredients
  • 1½ cups mezclun greens or broccoli mixed stems
  • 1 ounce crumbled blue cheese
  • 5 pecan halves
  • ½ teaspoon honey, sugar or sugar substitute,
  • olive oil spray
  • 1/8 teaspoon chili powder
  • 2 tablespoon Basic Creamy Wine Vinegar Dressing (pg. 52)
  • Balsamic vinegar (dark or white) 1 tablespoon
  • Honey or sugar substitute ¼ teaspoon
  • Low-fat Yogurt Spread or Greek Yogurt (pg. 39) 4 tablespoon
  • Olive oil 1 tablespoon
  • Salt ¼ teaspoon
  • Pepper 1/8 teaspoon
  • Low Fat Yogurt
  • 1 cup strained yogurt or Greek yogurt, plain unsweetened
  • ½ cup white wine
Method
  • Sprinkle pecan halves with sugar or substitute, chili powder and spray with olive oil spray. Bake for 10 minutes in a preheated 350°F oven, remove from pan and set aside to cool.
  • Mix Greens with dressing, sprinkle with pecans and blue cheese and serve.
