Ingredients
1½ cups lettuce, chopped or Turnip Greens
1 tablespoon raisins
1 tablespoon peanuts, dry roasted and salted
2 tablespoons Basic Creamy Balsamic Vinaigrette with Sesame
Oil (pg. 51)
Creamy Balsamic
Balsamic vinegar (dark or white) 1 tablespoon
Honey or sugar substitute ¼ teaspoon
Low-fat Yogurt Spread or Greek Yogurt (pg. 39) 4 tablespoon
Olive oil 1 tablespoon
Salt ¼ teaspoon
Pepper 1/8 teaspoon
Low Fat Yogurt
1 cup strained yogurt or Greek yogurt, plain unsweetened
½ cup white wine
15 basil leaves
3 thyme sprigs
½ tablespoon cornstarch
½ teaspoon minced garlic
½ teaspoon salt
¼ teaspoon pepper
Method
Mix all ingredients and serve at once.
If taking your salad to the office, place dry greens on one container and dressing with vegetables, nuts, fruit and protein in another container.
