  • 1½ cups lettuce, chopped
  • ½ thinly sliced and seeded cucumber
  • ½ thinly sliced zucchini
  • 2 tablespoons Basic Creamy Wine Vinegar Dressing (pg. 52)
  • 1 teaspoon minced fresh dill
  • Creamy Balsamic
  • 1 tablespoon Balsamic vinegar (dark or white)
  • ¼ teaspoon Honey or sugar substitute
  • 4 tablespoons Low-fat Yogurt Spread or Greek Yogurt (pg. 39)
  • 1 tablespoon Olive oil
  • pinch of salt
  • 1/8 teaspoon Pepper
  • Low Fat Yogurt
  • 1 cup strained yogurt or Greek yogurt, plain unsweetened
  • ½ cup white wine
  • 15 basil leaves
  • 3 thyme sprigs
  • ½ tablespoon cornstarch
  • ½ teaspoon minced garlic
  • ½ teaspoon salt
Method
  • Mix all ingredients and serve at once.
