Ingredients
  • 1½ cups lettuce, chopped
  • 1 cup sliced heart of palm, canned
  • 2 tablespoons Raspberry Vinaigrette (pg. 58)

  • ½ banana
  • 1 cup pineapple, diced
  • 1 cup crushed ice
  • 1/8 teaspoon almond extract
  • 1 tablespoon toasted and slice almonds
Method
  • Mix all ingredients and serve at once.
  • If taking your salad to the office, place dry greens on one container and dressing with vegetables, nuts, fruit and protein in another container.
