Ingredients
  • 12 scallops, clean, defrosted (3/4 pound)
  • 1 tablespoon olive oil
  • ¼ cup minced shallots
  • 1 minced garlic clove
  • ¼ teaspoon salt
  • 1/8 teaspoon pepper
  • 1 recipe Herbed Mango Sauce (pg. 62)
  • Herbed Mango Sauce (pg. 62)
  • ½ cup diced mango
  • 1 tablespoon Green Vinaigrette (basil, mint, cilantro) (pg. 56)
  • *Green Vinaigrette
  • Chopped mixed fresh herbs 4 tablespoons
  • Fresh Orange Juice 4 tablespoons
  • White Wine vinegar 1 tablespoon
  • Honey or sugar substitute ¼ teaspoon
  • Olive oil 2 ½ tablespoons
  • Salt ¼ teaspoon
  • Pepper 1/8 teaspoon
Method
  • Place a sauté pan or panini type grill over medium low heat. Add oil and garlic, salt and pepper, cook 1 minute.
  • Increase temperature to medium and add scallops. Cook 3 to 4 minutes, covered.
  • Remove from the pan and transfer to serving plates.
  • Serve with the sauce.
