Ingredients
12 scallops, clean, defrosted (3/4 pound)
1 tablespoon olive oil
¼ cup minced shallots
1 minced garlic clove
¼ teaspoon salt
1/8 teaspoon pepper
1 recipe Herbed Mango Sauce (pg. 62)

½ cup diced mango
1 tablespoon Green Vinaigrette (basil, mint, cilantro) (pg. 56)
*Green Vinaigrette
Chopped mixed fresh herbs 4 tablespoons
Fresh Orange Juice 4 tablespoons
White Wine vinegar 1 tablespoon
Honey or sugar substitute ¼ teaspoon
Olive oil 2 ½ tablespoons
Salt ¼ teaspoon
Pepper 1/8 teaspoon
Method
Place a sauté pan or panini type grill over medium low heat. Add oil and garlic, salt and pepper, cook 1 minute.
Increase temperature to medium and add scallops. Cook 3 to 4 minutes, covered.
Remove from the pan and transfer to serving plates.
Serve with the sauce.
