Method
Slice turkey meat to 1⁄4 inch thickness and as open as possible.
Process garlic until finely minced, add basil, scallion,
Madras Curry powder, cumin, salt and pepper and process to a fine grind. Add Dijon mustard and Yogurt (Dairy or Vegan) and process 5 seconds to incorporate. Set 2 tablespoons of the mixture aside and transfer the rest to the turkey breast, opened flat.
Spread the mixture over the turkey breast and roll like a jellyroll. Tie with twine and place two 2 inch square pieces of foil over each corner. Refrigerate for 20 minutes or until ready to cook.
Bake at 300°F for 1 and 1⁄2 hours.
Cover with foil for 10 minutes. Prepare the sauce. Slice and serve with Curry Cumin sauce..
