Ingredients
  • 2 pound piece of turkey breast, skin removed
  • 2 garlic cloves
  • 20 basil leaves
  • 4 scallions, white and green part
  • 1 teaspoon Madras Curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 teaspoons grainy Dijon mustard
  • 4 tablespoons Plain Yogurt
  • 1 recipe Madras Curry Powder Cumin Sauce (pg. 61) (1 cup plus 2
  • tablespoons)
Method
  • Slice turkey meat to 1⁄4 inch thickness and as open as possible.
  • Process garlic until finely minced, add basil, scallion, Madras Curry powder, cumin, salt and pepper and process to a fine grind. Add Dijon mustard and Yogurt (Dairy or Vegan) and process 5 seconds to incorporate. Set 2 tablespoons of the mixture aside and transfer the rest to the turkey breast, opened flat.
  • Spread the mixture over the turkey breast and roll like a jellyroll. Tie with twine and place two 2 inch square pieces of foil over each corner. Refrigerate for 20 minutes or until ready to cook.
  • Bake at 300°F for 1 and 1⁄2 hours.
  • Cover with foil for 10 minutes. Prepare the sauce. Slice and serve with Curry Cumin sauce..
