Ingredients
½ skinless chicken breast, cut in half 4 ounces each
2 tablespoon Green Vinaigrette (pg. 56)
1 tablespoon plain yogurt
1 cup diced mushrooms, roasted
Pinch salt and pepper
*Green Vinaigrette
4 tablespoons Chopped mixed fresh herbs
4 tablespoons Fresh Orange Juice
1 tablespoon White Wine vinegar
¼ teaspoon Honey or sugar substitute
2 ½ tablespoons Olive oil
¼ teaspoon Salt
1/8 teaspoon Pepper
Method
Place each breast half in a bowl with vinaigrette and yogurt, set aside for 10 minutes or refrigerate if longer.
Place each breast half opened, over plastic wrap and add half of the mushrooms to each.
Roll each breast towards the long side of the breast and secure with a toothpick.
Bake in a preheated 375°F oven for 10 to 12 minutes. Serve.
