Ingredients
  • ½ skinless chicken breast, cut in half 4 ounces each
  • 2 tablespoon Green Vinaigrette (pg. 56)
  • 1 tablespoon plain yogurt
  • 1 cup diced mushrooms, roasted
  • Pinch salt and pepper
  • *Green Vinaigrette
  • 4 tablespoons Chopped mixed fresh herbs
  • 4 tablespoons Fresh Orange Juice
  • 1 tablespoon White Wine vinegar
  • ¼ teaspoon Honey or sugar substitute
  • 2 ½ tablespoons Olive oil
  • ¼ teaspoon Salt
  • 1/8 teaspoon Pepper
Method
  • Place each breast half in a bowl with vinaigrette and yogurt, set aside for 10 minutes or refrigerate if longer.
  • Place each breast half opened, over plastic wrap and add half of the mushrooms to each.
  • Roll each breast towards the long side of the breast and secure with a toothpick.
  • Bake in a preheated 375°F oven for 10 to 12 minutes. Serve.
