Ingredients
One-3-pound whole chicken
1 cup Creamy Chimichurri Sauce (pg. 49)
1 teaspoon salt
¼ teaspoon pepper
*Creamy Chimichurri Sauce
3 cloves garlic
¾ cups minced parsley
¾ cup minced cilantro
30 basil leaves or 15 culantro (spiny or long leaf coriander) leaves
1/3 cup minced green onions, green and white parts (3 scallions)
1 tablespoon rice vinegar
1 teaspoon salt
¼ teaspoon pepper
½ cup thick yogurt
1 tablespoon oil (canola or similar)
Method
Spread chimichurri sauce under the chicken’s skin, sprinkle with salt and pepper all over the bird; refrigerate one hour or overnight.
Bake in a preheated 375°F oven for 1 1⁄2 hours or until it reaches and internal temperature of 160°F.
Remove from the oven, cut into the two breasts, leg and thigh.
