Ingredients
  • One-3-pound whole chicken
  • 1 cup Creamy Chimichurri Sauce (pg. 49)
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • *Creamy Chimichurri Sauce
  • 3 cloves garlic
  • ¾ cups minced parsley
  • ¾ cup minced cilantro
  • 30 basil leaves or 15 culantro (spiny or long leaf coriander) leaves
  • 1/3 cup minced green onions, green and white parts (3 scallions)
  • 1 tablespoon rice vinegar
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup thick yogurt
  • 1 tablespoon oil (canola or similar)
Method
  • Spread chimichurri sauce under the chicken’s skin, sprinkle with salt and pepper all over the bird; refrigerate one hour or overnight.
  • Bake in a preheated 375°F oven for 1 1⁄2 hours or until it reaches and internal temperature of 160°F.
  • Remove from the oven, cut into the two breasts, leg and thigh.
  • Enjoy!
