Ingredients
  • 4 servings of Cashew Sauce (pg. 66)
  • 4 boneless, skinless chicken breasts, 1 pound
  • 1 tablespoon olive oil
  • ½ teaspoon dark sesame oil
  • 1 teaspoon Garam Marsala spice (pg. 67)
  • 1 teaspoon grated ginger
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Garam Marsala
  • 1 teaspoon cloves
  • 1 teaspoon cumin seeds
  • 3 teaspoon cardamom
  • 3 teaspoons ground cinnamon, or 1 cinnamon stick
Method
  • Cut breast into 1-inch dice. In a small bowl mix olive oil, sesame oil, Garam Marsala spice, ginger, salt and pepper. Skewer chicken pieces and brush with seasoned oil. Refrigerate until ready to cook.
  • Prepare cashew sauce, serve warm on the side.
  • Cook kabobs over a grill or in a large pan 2 minutes per side, turn cover and cook 3 minutes.
  • Serve with sauce on the side.
