Place egg white, yogurt, salt and pepper in a bowl. (You can beat the egg white to soft peaks first if desired). Mix with a fork to incorporate all ingredients well. Place bread slice onto mix and allow to sit for 2 minutes.
Turn, prick with a fork and allow to sit for two minutes more. The bread will have absorbed almost all the mixture.
Place bread in a medium heated flat pan, sprayed with olive oil.
Cook for 2 to 3 minutes on each side, or until lightly
browned.
Cut each slice into 4 triangles. Serve with a small scoop °F goat cheese spread and 2 thin slices °F turkey ham or salami.
