Place egg white, yogurt (Dairy or Vegan), ginger, salt and pepper in a bowl. (You can beat the egg white to soft peaks first if desired)
Mix with a fork to incorporate all ingredients well. Place rye slice over the mix and allow to sit for 2 minutes.
Turn the bread, prick with a fork, and allow to sit for two minutes more in the egg white mixture. The bread will have absorbed almost all the mixture.
Place bread in a medium heated flat pan, sprayed with olive oil. Cook for 2 to 3 minutes on each side, or until lightly browned.
