Ingredients
  • 1 slice rye bread, 1 ounce
  • 1 egg white
  • 2 tablespoons low-fat plain yogurt
  • 1/2 teaspoon pickled ginger
  • pinch of salt and pepper
  • 1/2 teaspoon dark sesame seeds
Method
  • Place egg white, yogurt (Dairy or Vegan), ginger, salt and pepper in a bowl. (You can beat the egg white to soft peaks first if desired)
  • Mix with a fork to incorporate all ingredients well. Place rye slice over the mix and allow to sit for 2 minutes.
  • Turn the bread, prick with a fork, and allow to sit for two minutes more in the egg white mixture. The bread will have absorbed almost all the mixture.
  • Place bread in a medium heated flat pan, sprayed with olive oil. Cook for 2 to 3 minutes on each side, or until lightly browned.
  • Serve with desired sauce or spread.
