Increase protein by cutting bread by half
Ingredients
½ cup flour
1 tablespoon ground flaxseed (optional)
½ teaspoon baking powder
1/8 teaspoon cinnamon
¼ teaspoon salt
1 egg white
½ cup milk
1½ tablespoon oil
1 teaspoon honey
½ teaspoon vanilla
Method
1 cup slice papaya, pineapple or other fruit
Place flour, flaxseed, baking powder, cinnamon and salt in a bowl and mix with a fork.
Place egg white, milk, raisins and vanilla in another bowl and mix.
Pour the liquids over the solids and mix.
Cook on an oil sprayed sauté pan or panini type grill over medium heat. Cook for 2 to 3 minutes per side. Serve with spread and fruit.
To each serving add 1/2-ounce Goat Cheese Spread pg. 36 and half a red apple, sliced.
