Increase protein by cutting bread by half
Ingredients
  • ½ cup flour
  • 1 tablespoon ground flaxseed (optional)
  • ½ teaspoon baking powder
  • 1/8 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 egg white
  • ½ cup milk
  • 1½ tablespoon oil
  • 1 teaspoon honey
  • ½ teaspoon vanilla
Method
  • 1 cup slice papaya, pineapple or other fruit
  • Place flour, flaxseed, baking powder, cinnamon and salt in a bowl and mix with a fork.
  • Place egg white, milk, raisins and vanilla in another bowl and mix.
  • Pour the liquids over the solids and mix.
  • Cook on an oil sprayed sauté pan or panini type grill over medium heat. Cook for 2 to 3 minutes per side. Serve with spread and fruit.
  • To each serving add 1/2-ounce Goat Cheese Spread pg. 36 and half a red apple, sliced.
