Ingredients
  • 2 egg whites
  • 1 tablespoon low-fat milk or 2%
  • 1/8 teaspoon salt
  • pinch of pepper
  • 1 ounce grated cheese
  • 2 slices turkey ham, 2 ounces
  • fills two-3in- muffin pan cups (spread with oil)
  • sprinkle muffin pan with oil
Method
  • Place egg whites, milk, salt and pepper in a bowl. Beat with wire whisk or with an immersion blender until slightly frothy, about 5 seconds.
  • Place a piece of ham into each of 2 (non stick or oiled) muffin cups. Divide the cheese and place over the ham. Pour the egg mixture over the cheese.
  • Bake in a preheated toaster oven for 4 to 5 minutes or until they sponge up and feel firm to the touch.
  • With butter knife or small plastic utensil scrape the sides of the muffin tins and separate the ham. Serve.
