Ingredients
1 small diced, peeled green apple
1 tablespoon lime juice
½ cup thinly sliced onion
pinch of Salt
¼ teaspoon pepper
1 garlic clove, minced
½ teaspoon dark sesame oil
½ cup vegetable stock or water
¼ cup Plain Yogurt
½ teaspoon cornstarch
Method
Mix apple with lime juice and set aside.
Drizzle oil over a saucepan over medium heat, add onion, salt and pepper and cook for 2 to 3 minutes. Add garlic, sesame oil, and apple and cook 2 minutes more. Pour mixed stock, yogurt and cornstarch and bring to a boil.
Remove from the heat. Mix and serve.
