Snack with Some Protein
Increase protein by serving w/ yogurt-tofu
Ingredients
5 tomatoes, peeled, seeded, diced (approx. 2 ½ cups)
2 scallions, sliced
4 tablespoons minced cilantro
2 tablespoons balsamic vinegar
1 tablespoon honey, sugar or sugar substitute
1 teaspoon salt
1 teaspoon barbeque spices
¼ teaspoon pepper
1/2 cup lightly toasted pine nuts
Method
Dice and core tomatoes; mince the rest of the ingredients.
Mix all ingredients in a bowl to create a Salsa style side or sauce.
Refrigerate covered until ready to use.
