Ingredients
  • 5 tomatoes, peeled, seeded, diced (approx. 2 ½ cups)
  • 2 scallions, sliced
  • 4 tablespoons minced cilantro
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey, sugar or sugar substitute
  • 1 teaspoon salt
  • 1 teaspoon barbeque spices
  • ¼ teaspoon pepper
Method
  • Dice and seed tomatoes; bake pine nuts at 325°F FOR 5 MINUTES OR UNTIL LIGHTLY GOLDEN; mince the rest of the ingredients.
  • Mix all ingredients in a bowl to create a Salsa style side or sauce.
  • Refrigerate covered until ready to use.
